    Battercrisp Shrimp
  • 2 tsp.
    Vegetable Oil
  • ⅓ cup
    White Onion, minced
  • 1 ea.
    Garlic Clove, minced
  • 2 cups
    Orange Juice
  • 2 tbsp.
    White Wine Vinegar
  • ⅓ cup
    Sugar
  • ⅓ cup
    Ketchup
  • 1 tbsp.
    Chipotles in Adobo, minced
  • 1 ea.
    Large Head Nappa Cabbage, halved lengthwise and sliced very thin
  • 1 ea.
    Carrots, julienned
  • 1 ea.
    Red Pepper, julienned
  • 3 ea.
    Scallions, sliced very thin on bias
  • ½ cup
    Fresh Cilanto, lightly packed
  • 20 ea.
    Wonton Skins, cut in half and deep fried till crispy
  • 1 cup
    Sliced Almonds, lightly toasted
  • 4 tsp.
    White Sesame Seeds
  • Dressing:
  • 2 tbsp.
    Reduced Sodium Soy Sauce
  • 1 tbsp.
    Fresh Ginger, finely chopped
  • 1 tbsp.
    Canola Oil
  • 1 tbsp.
    Hoisin Sauce
  • 1 tsp.
    Sesame Oil
  • ½ tsp.
    Sriracha

Directions

  1. For the glaze, sauté the minced white onion and garlic in the vegetable oil for 2-3 minutes over a medium setting until translucent. Add the orange juice, vinegar, sugar, ketchup and chipotles to the pan and continue cooking. Stir occasionally until the glaze is reduced by half.
  2. Prepare the shrimp per the package instructions. For each salad, deep fry 4 shrimp for 2.5 minutes at 350 degrees. Once cooked, toss shrimp in ¼ cup of reserved chipotle-orange glaze.
  3. Meanwhile, prepare the salad in a medium bowl. Toss together the napa cabbage, carrots, red peppers, scallions and almonds.
  4. In a small bowl combine the soy sauce, ginger, canola, hoisin, sesame and sriracha. Mix well to combine and toss with the salad ingredients.
  5. Plate the salad into 4 equal portions. Sprinkle each with 1 tsp. of sesame seeds, top with glazed shrimp and approximately 10 crispy wonton halves.
