Preheat your oven to 400 degrees. Line a 12x15” baking pan with aluminum foil. Whisk together the oil, lime juice and garlic in a large bowl. Toss in all of the chopped vegetables and toss to coat well. Arrange the vegetables on the pan and roast for approximately 15-20 minutes until all of the vegetables are tender. Meanwhile, prepare the salmon portions per the package instructions. To assemble burritos; spoon vegetable mixture equally onto tortillas. Top each with a piece of cooked salmon, 1 tbsp. of cilantro and sour cream. Fold the tortilla over the filling once and then both edges of tortilla in. Continue to roll the burrito until complete. Enjoy with additional sour cream and fresh lime if desired.
